Pectin widely used in food and beverage applications such as jams, jellies, candy, high fiber drink, and fruit-based beverages. Pectin can be used as stabilizer, thickener, gelling agent, preserving agent, and flavour enhancer.
Pectin is derived from citrus peel and has ability to form gels in presence of acid and sugar. There are two types of Pectin, Low Methoxyl pectin and High Methoxyl pectin. High Methoxyl pectin needs presence of sugar to form gel, Low Methoxyl pectin doesn’t need sugar to perform gel reaction, but it needs the presence of calcium ion. High Methoxyl Pectin then divided into rapid set pectin and slow set pectin, according to the time needed by pectin to form gel in a sugar-acid-buffer system. Rapid set pectin needs less time to form gel compared to slow set pectin.
